The Most Amazing Pumpkin Muffins Ever And How to Make Them

Oh happy day! I just made THE MOST amazing pumpkin muffins ever. And the recipe tells me they’re only 77 calories each. I’m a Skeptical Sally and I don’t know how that could possibly be true because they’re so delicious, but I guess it makes sense. The ingredients are an egg white, water, canned pumpkin, and spice cake mix. No oil, no butter. It kind of makes sense. But still. It seems too good to be true. Here’s the link to the full recipe. Thanks to Courtney at food.com for sharing it. Go make these guys. NOW! They’re fool-proof. Even if you always burn or ruin baked goods you will be able to do these muffins. They take about 15 minutes to bake and 5 minutes to prepare. Easy, fast and healthy. They are sent from the heavens. Let’s take a look at some pictures, shall we?

Then bake. I baked mine for about 16 minutes. The recipe says 12-18 minutes. The finished product looks like this:

So light and fluffy. Extra points if you burn a pumpkin spice candle in the background while you eat them like I did. Points deducted if you need a manicure like I do.

You can also ruin some of the healthiness of the simple muffin recipe by adding cream cheese frosting. It’s worth it because they are SO GOOD this way:
