I Love October (A Recipe For Quick + Easy Baked Apples)

Hello hello. Hope you’re having a great weekend. Chris and I finally resolved The Great Costume Dilemma, which makes me feel better. I know, who gets stressed out about Halloween costumes? But Halloween is my favorite holiday so I didn’t want to drop the ball. And last year I had the flu and we did absolutely nothing, so I’m determined to make this year count. I’m excited to post pictures to see what you guys think of our outfits.

Yesterday we went apple picking, which is something we’ve wanted to do for literally two years. Why has it taken us so long, you ask? Because Chris works a lot of Saturdays and then every time he’s not working it’s either raining or…we’re just really lazy. It was a really nice day yesterday, so we went and had a lot of fun. Some pictures:

Today I made baked apples for the first time. SO GOOD. Here’s the recipe I used if you want to try it. You make them in the microwave so they’re quick and so yummy. They’re also 186 calories each AND you don’t need to go out and buy a ton of ingredients. All good things.

Here are the ingredients you’ll need:

Nutmeg, brown sugar, cinnamon, butter (or margarine) and a good-sized apple

Cut the core out of the apple with a paring knife like so:

Combine the spices together (exact amounts are listed in the actual recipe here)

Pour the spice mixture in the center of the apple

Then add some butter on top

I may have gone overboard with the butter on this apple but…whatevs.

Put the apples in a casserole pan, cover them, and put them in the microwave for 3 1/2-4 minutes. Then
