Over the past few weeks I’ve been trying to expand my cooking repertoire. I’m not a horrible cook per say, but I really only know how to make a few dishes well. I can do chili, chicken, pasta, steak, the basics. But lately I’ve been Googling (this is now a word) around to try to find some recipes that I can make. I’ve discovered that there are a tons of sites that offer healthier versions of comfort foods like penne alla vodka. This was an awesome discovery. I really like eating healthy, but I don’t like the idea of completely cutting foods I love out of my diet.
This recipe from Oprah.com (thanks, O) for a healthier penne alla vodka was awesome and actually really easy to make. The recipe only required a few steps and a few basic ingredients. I added chicken, but you can just make the pasta if you want. The recipe uses Greek yogurt–obviously I used Chobani, speaking of which have you entered to win a case of Chobani shipped to your door? No? Then click here--and low fat marinara sauce to create the vodka sauce taste without the fat and calories of heavy cream. Whole wheat pasta makes the whole meal healthier. I was afraid that the Greek yogurt substitution would be noticeable in the finished product, but the pasta was really satisfying, creamy, and delicious. Best of all, I didn’t feel like I had just sabotaged my healthy eating efforts when I was done. It was a huge win.
I also had good luck with this Honey Mustard Chicken recipe from Weight Watchers. Like the penne, this recipe also only requires a few ingredients and is easy to cook even if you’re not a pro in the kitchen. The finished product tasted like fried chicken dipped in honey mustard sauce. It was awesome! I’ll definitely be making it again.
