The Easiest Dessert You'll Ever Make In Your Life

Happy New Year! I hope your New Year’s Eve met or exceeded your expectations and that you found someone wonderful to smooch at midnight. I went to a party at a friend’s apartment and then to a bar. It was pretty low key and enjoyable. Here are a few pictures as promised

You’ll notice that I broke my “I never wear lipstick” thing and went for a bold lip, as pictured:

I know. I look ridiculous when I don’t smile, but I wanted to properly demonstrate my lip color. So anyway it was a fun night, even though my hair was stick straight about two hours into the whole thing. Probably not worth the hours of effort and two curling irons I used to make it look like you see above, but you live and you learn.

Anyway, today’s post is dessert-related. I recently found out about the magic that is mug cake. Obviously I discovered it on Pinterest. You ever get a craving for cake but you don’t feel like having an entire pan of cake sitting around your house for you to munch on endlessly? Me too. That’s why mug cake will change your life. Here’s how you do it:

Combine a box of Angel Food cake mix with a box of cake mix of your choice. I picked Red Velvet. Mix them together in a big Tupperware tub like this, for easy mug cake making.

Ready for some mug cake deliciousness

Okay, so once you’ve got the two mixes combined, measure out three tablespoons of cake mix into a coffee mug. Add in two tablespoons of water and microwave the whole thing for one minute. Then, bam! Hot, fluffy cake in a mug. Looks like this:

I’ve read that this only contains 130 calories, making it an even better option when you want a little something sweet but don’t want to accidentally eat three pieces of cake. I’m a huge fan.

Also! I was asked to write a post for 20somethings in 2013, a blog that features people in their twenties and talks about their careers and thoughts on life as a twenty-something. I was honored to be asked to write a post, so if you get a minute please check it out!
