I know I say this over and over again, but I adore my crockpot. I am seriously considering starting a religion dedicated to this thing. Throw in a few ingredients, leave it all day, then eat a delicious meal. Does it get any better? I’ve found a lot of great crockpot recipes on Skinny Ms., as well as on Spark People. However, a discovery of a new site yesterday (called Crock-a-doodle-doo) led me to find a delicious Italian Chicken recipe. The recipe calls for chicken breasts, Italian dressing, and Parmesan cheese (I used fat-free dressing to lighten it up). It technically also needs Italian seasoning, carrots, and potatoes, but I didn’t have those ingredients in the house and was determined to use the crockpot anyway. It still tasted delicious, even without these items. The recipe was rich and flavorful, but not too saucy or tangy. If you’re looking for a quick recipe that requires only what you probably already have in your pantry, this is it.
Obviously I did too much eating and not enough picture taking, but this is what the dish looks like on the blog where it came from. I’d definitely recommend giving it a try!
